the (baked) goods: red velvet cupcakes

Yesterday the boyfriend (and the baby) were away; so I thought I would play - in the kitchen.

This time around I thought I'd take a stab at a bloody good treat(can you guess it??) - Red Velvet Cupcakes!

I quickly found out there are about a million different recipes for these. I ended up using one provided by the repressed pastry chef.

And so begins another delicious photographic journey...

This one will make the boyfriend cringe!

Let me say this - the recipe for the cupcake is brilliant. Super light, moist and fluffy. I love it and I will be using it again.

The icing is where things began to head south. The frosting recipe that came with these cupcakes was not such a charmer. In fact, it ended up in the trash can.

I moved on to the cream cheese icing recipe by Martha.  I followed this recipe precisely because that is what I do. I'm no deviant - I do what Martha says. So why did she give me a recipe for a buttered down cream cheese?   These cupcakes taste like a chocolaty bagel. FYI - that's not a good thing!

Oh well, you live and learn. At least the icing looks good.

Could any of you share a fantastic cream cheese frosting recipe with me? I know there's a good one out there somewhere!
